Ground Turkey and
Mozzarella Meatloaf
2 eggs, slightly beaten
3/4 cup soft bread crumbs
1/2 cup spicy V-8 juice
1/2 teaspoon ground oregano
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic salt
2 pound ground turkey
8 oz. thinly sliced mozzarella cheese, diced (low fat)
(Reserve 2 slices for the topping)
6 oz. tomato paste
3 tablespoon Parmesan cheese, divided
Preheat oven to 350 degrees.
Mix the ingredients except cheeses. Divide turkey mixture in
half. Shape half of the turkey into a flattened oval in the
bottom of a 9 x 13 inch glass dish. Top with diced cheese;
spread to within 1 inch of the edge. Sprinkle with 2 tablespoons
Parmesan cheese. Top with remaining turkey mixture; seal edge by
pressing together. Spread top of turkey with tomato paste;
sprinkle lightly with additional garlic salt, pepper and salt.
Bake 1 hour. Top with sliced cheese. Sprinkle with remaining
Parmesan cheese; return to oven until cheese melts. Allow to sit
5-10 minutes before serving.
