Polynesian Turkey
Meatballs
1 pound ground turkey
1-1/2 cup bread crumbs
2 beaten eggs
1/4 cup chopped onion
1/4 cup chopped almonds
3 tablespoon soy sauce
1 tablespoon water
1/2 teaspoon pepper
1 tablespoon oil
13 oz. pineapple chunks
1-2 tablespoon wine vinegar
3 tablespoon cornstarch
1 green pepper, cut into strips
Cooked rice
Mix meat, bread crumbs, eggs, onion, almonds, 1 tablespoon
soy sauce, water and pepper. Shape into 1-1/2" balls. Brown
slowly in hot oil; remove. Sauté green pepper strips until
tender
crisp, remove from oil. Drain off fat. Drain juice from
pineapple
and add enough water to make 1 1/2 cups liquid. Heat liquid with
vinegar. Combine cornstarch and 2 tablespoons soy sauce; add to
pineapple mixture in pan. Stir constantly until liquid is bubbly
and
thickened. Gently stir in pineapple chunks, green pepper and
meatballs.
Heat thoroughly. Serve over hot cooked rice.
