Turkey Meatballs with
Beer Sauce
1 egg, beaten
1 cup tomato or cheddar cheese soup
1 cup soft bread crumbs
1 large ground turkey
1 medium onion, sliced
2 tablespoons oil
1/2 cup beer
1/2 teaspoon dried oregano
Hot cooked noodles or rice
Combine eggs, 1/4 cup soup, crumbs, and ground
turkey; mix well. Shape into about 36 meatballs. In a
skillet, cook onions in oil until soft. Remove onions
and save. Add meatballs to skillet; cook until browned,
drain off fat. Combine remaining soup, beer, and
oregano. Add to skillet with onions, bring to a boil.
Reduce heat and simmer for 15-20 minutes. Serve
over noodles or rice.
Makes 6 servings.
