Turkey Meatballs in
Tomato Sauce
1 pound ground turkey
1 cup Italian bread crumbs
2 eggs
1 tablespoons Parmesan cheese
2 tablespoons chopped fresh parsley
Salt and pepper to taste
1 (28 oz.) can crushed tomatoes
Olive oil
Basil or oregano to taste
In a large bowl, mix thoroughly, turkey, bread crumbs,
eggs, cheese, parsley and salt and pepper. Add more bread
crumbs if needed. Roll into balls. Heat olive oil in large pot.
Fry turkey balls until brown on all sides. Add crushed tomatoes.
Stir and simmer for 1 hour. If more sauce is desired, add
another can of tomatoes. Add some basil and oregano while
cooking. Serve with your favorite pasta..
Makes about 18 meatballs.
