Turkey Meatballs with
Wine Sauce
1 pound ground turkey
1 egg white
1/3 teaspoon pepper
1/2 cup burgundy wine
1 teaspoon paprika
1 cup fresh bread crumbs
1/2 teaspoon salt
2 cup tomato juice
2 cloves garlic, minced
Minced parsley
In medium sized bowl, mix turkey, bread crumbs, egg white,
salt, pepper, 1 tablespoon parsley and 1/4 cup water. With
wet hands, shape mixture into 20 meatballs. Spray rack in
broiling pan; arrange meatballs on rack. Broil meatballs 8 to 10
minutes until browned on all sides. In 12" skillet over medium
heat, bring meatballs, tomato juice, remaining ingredients and
2 tablespoons parsley to boiling. Reduce heat to low; cover and
simmer 15 minutes, stirring occasionally. Serve over hot rice.
Makes 5 servings about 230 calories.
