Turkey Tortillas
1 lb. leftover cooked
turkey
1 (16 to 16 1/2 oz.) jar salsa
1 (16 oz.) can refried beans
6 (7-8") flour tortillas
2 c. grated Cheddar cheese
Green onion
Sour cream
Black olives
Chopped green or red peppers (optional)
Cut turkey into bite-size
pieces. In bowl, combine turkey and salsa.
Spread 1/6 refried beans on each tortilla. Then spread 1/6
turkey
mixture on each tortilla. Reserve 1/2 cup of the grated
cheese.
Place 1/6 of remaining Cheddar cheese on each tortilla; roll
up.
Place tortillas, seam-side down in 9x13 inch baking dish.
Cook,
covered, in 375 degree oven approximately 30 minutes or until
filling
is hot. Or microwave on High 3-4 minutes. Near end of cooking
time,
sprinkle with reserved 1/2 cup Cheddar cheese. Garnish with
onion,
sour cream, black olives and/or chopped pepper.
