Chow Chow
Pickles
1 gallon cabbage (9 lb.)
1 qt. onions, chopped
1/2 gallon green tomatoes, chopped
Salt
1/2 gallon vinegar
3 lb. sugar
2 tsp. mustard seed
3 tsp. celery seed
Grind cabbage, tomatoes, and onions coarsely.
Let stand several hours with salt sprinkled over
them. Drain overnight in a cloth bag. Mix with
spices, vinegar, and sugar. Cook until tender.
Put in boiled jars and seal.
