Okra Dill
Pickle
3 lbs. okra
3 c. water
12 heads dill
3 c. vinegar
6 tbsp. salt
Use small tender pods of okra, cut with as much
stem as possible. Wash and drain. Prick each pod
with pin to allow solution to enter pod. Pack okra
into jars. Place a small bunch of dill in each jar with
okra. Boil water, vinegar and salt together until salt is
dissolved. Fill each jar to within 1/2 of top. Process in
boiling water bath 5 minutes. If you like you may slice
a clove of garlic into each jar and make Kosher dills.
