Spiced Peaches
4 qt. med. firm ripe peaches
8 c. sugar
4 c. cider vinegar
4 c. water
1 tbsp. whole allspice
1 tbsp. whole cloves
1 tsp. dried ginger root
Put sugar, vinegar, water and spices (that
have been tied in a cheesecloth bag) in a
large kettle. Bring to a boil for 5 minutes.
Add peaches and simmer until tender. Quickly
remove peaches to hot sterilized jars and
pack to within 1/2 inch of jar top. Bring syrup
to a rolling boil and pour over peaches, filling
jars to top. Seal at once.
