Lime Pickle
7 lb. cucumbers, sliced
1-1/2 c. pickling lime
2 gallons water
5 lb. sugar
3 pt. vinegar
1 tsp. cloves
1 tsp. mace
1 tsp. cinnamon
1 tsp. allspice
1 tsp. celery seed
Dissolve lime in the water, add cucumbers and
leave to soak for 24 hours. Stir occasionally.
Second day, drain cucumbers and soak in fresh
water for 4 hours, changing water every hour.
Make syrup of the sugar, vinegar, and spices.
Bring to a boil and pour over the cucumbers. Let
stand overnight. Third day, boil the cucumbers in
syrup for 1 hour. Fill jars and seal. Process 15 minutes
in hot water bath.
